February 7th: sweet potato fries with curry mayo

The cookbook finally lives up to its name: from Best Recipes Ever, these sweet potato fries with curry mayo are the best sweet potato fries I have ever made. I am no novice in the sweet-potato-fry-making category either. This is my new favourite recipe and the one I will be turning to in future. One note about the curry mayo: I realized when I went to make it that I didn't have any limes, so I subbed in lemon juice. I doubt the difference is that significant, and the mayo was delicious. We ate the full mayo recipe with half the fry recipe. Yum yum.


Served with mushrooms, spinach and haddock

  2. Tried the fries. Lemon in mayo was tasty. The spice combination worked well with the lemon curry mayo. Only downside is that rather than the egg white sticking all the spices to the sweet potatoes, like i'm sure it was intended, it mostly ran off then cooked and all the fries were sort of attached to each other/the parchment paper. I'll try it again without the egg whites

    (Aside: what should i do with two egg yolks?)

  4. Tried the sweet potato fries...I found the spices blackened before the fries were cooked and crispy. I am thinking about parboiling the potato stripe first. Thoughts?

  5. I've never parboiled sweet potato fries, but it works well with white potatoes. I would say, give it a go!
